Its formulation, including neutral red, crystal violet, and bile salts, inhibits non-target Gram-positive bacteria. This medium allows for the detection of indicator groups like coliforms, crucial for assessing food hygiene, safety, quality, and spoilage potential, especially in processed foods where they indicate process failure or contamination. Enterobacteriaceae appear as purple-pink colonies with surrounding halos due to glucose fermentation and the incorporated indicators.
